6 Ways To Make A Better Mac And Cheese
1. Use a combo of whole milk and heavy cream
Typically, I like the texture of my baked mac and cheese between creamy and not too creamy. To do that, I add my whole milk to a measuring cup.
After that, I will add the heavy cream. Since I do not use exact measurements, I rely on my instincts. If it’s too thick, I will add more milk. Or if I want it creamier, I will add more heavy cream.
2. Start the base of your cheese sauce with a roux
To make it, you only need flour and butter. In a hot pan, add some butter. Once it has started to melt, add your flour. Take a whisk and mix it around.

When it is all mixed up slowly, whisk in your milk mixture, and there you go. You have just created the base for your sauce.
3. Use good quality cheese for your base
For the base of your sauce, use blocks of cheese. And not the pre-shredded ones that come in the bag. For the blocks, you can either cut them up into pieces or use a cheese grater. It sounds boring, but trust me, it will taste better.
Now, for the cheeses that I like to use in my cheese sauce. They vary from time to time. But my main ones include Colby Jack, Monterey Jack, Extra Sharp Cheddar, Mild Cheddar, Gouda, and Mozzarella.
4. Add seasonings to your cheese sauce

For my preference, I like using salt, pepper, mustard powder, garlic powder, onion powder, red pepper flakes, and a little Italian seasoning. But if you do not have red pepper flakes, you can use hot sauce
as a substitute. Also, remember to taste your cheese sauce. As you add your seasonings to make sure everything is balanced. Because what you do not want is a flavorless sauce.
On top of that, you want to keep the temperature low. To prevent the cheese from burning and the milk from curdling -as you melt it for your sauce
5. Cook your pasta al dente
Depending on the brand of pasta you buy, they will tell you on the packaging how to make it al dente.
But if it does not, just cook it for about 2 to 3 minutes, less than what it says on the packaging. Also, add salt to the water while you wait for it to boil.
6. Do not overcook the dish
Never overcook your dish. Because if you do, you will have overcooked noodles and dried-out cheese. So, if you want to avoid that, follow my tip.

Bake at 375°F (190°C ) slightly covered with aluminum foil, for about 20 to 30 minutes. Once melted enough, remove the foil and cook on broil for 5 minutes, allowing the cheese on top to get a little crispy and brown.
